A Christmas sharing showstopper

It is 7 long sleeps until Christmas Day as Leila keeps saying, the Elf on the shelf is getting more and more frustrated trying to work out what he will do each evening before bed time.

I would love to say the Christmas presents are wrapped up beautifully but really I’m still deciding on what gifts to buy. At least, I will have one thing prepared… the Christmas dessert.

I received a hamper full of goodies from the kind folks at SuperValu and a very handy, Bring Home Christmas guide, full of top tips and recipes. I thought today would be a good day to get the children involved and to bake something new. I have never made a pavlova before because my mother’s pavlova is hard to beat.

Chef Noel McMeel of the prestigious Lough Erne resort and now proud ambassador for SuperValu recommends a pavlova recipe as a light alternative to the heavier Christmas pudding. Since Supervalu have provided me with all the ingredients, it would be rude not to make it.

 

My first attempt at whisking egg whites, didn’t go to plan. I didn’t whisk them until they formed stiff peaks.  By the way, it did say this in Noel’s recipe but I was to excited to get to the decorating stage.

If you decide to make this with your children and you wonder why it has suddenly become quiet, one of your little crew may be found in another room with the whisk and left over mixture.

So far, quick and easy, bake it for 1 hour and let it cool completely inside the oven. Once it has cooled down, now the fun begins. The children adored decorating the white cake, as they call it.  They had to be reminded that the strawberry sauce was not a smoothie and it was for the pavlova.

Noel’s Christmas pavlova has gone down a treat and Noel himself has claimed it is a show stopper. It is absolutely delicious and not only that, it is so quick and easy to make. This is a guaranteed stress free Christmas dessert, especially for all of you busy mums out there.
